Go make noise!

If we intend to make our interest be recognized, all we need to do is make a noise about it! One may either write or talk about a certain issue. This is exactly what happened last weekend. In Vancouver, a Filipino parade entitled ‘Unang Hirit’ showcasing Filipino culture created a big noise. Some claimed it was the biggest and colorful parade organized by Filipinos. A street parade starting from Fras­er, Multicultural Helping House to St. Patrick Church ground at Main Street where trade exhibits, food stalls and entertainment shows were held. Many claimed it was successful! We hope the orga­nizers have a chance to evaluate the event turn out and how they can still improve by showcasing positive, significant and unique contributions of Filipinos to the Vancouver community.

It is unfortunate that the event coincided with ANCOP (Answer­ing to the Cry of the Poor) Walk, a 4-km walk for a cause conducted by a Christian based organiza­tion founded by the Couples for Christ. It helps the very poor peo­ple in the Philippines and other countries by providing support to select organizations that work for the poor. The proj­ects include shelter & housing and child ed­ucation and programs partnered with essential values formation. ANCOP Walk is a yearly event that is usually held in various places in Canada or global com­munities where Filipino’s innate desire to share their resources to the less fortunate back home, the Philippines are very visible. Filipino baby boomers are hope­ful that life for our less fortunate ‘kababayans’ can be better by coming together and contribute time and resources.

Summer is almost over yet we still look forward to a sunny joy the best Grilled Salmon. Yes, it is Sockeye’s Salmon’s harvest season! What is so special about Sockeye Salmon. It is the only bright pink colored fish-meat I’ve ever seen and ate. The fish meat is firm compared to other types of salmon. It is the most expensive salmon when not in season but very affordable at this time of the year! It is best eaten as is or prepared Sashimi or Sushi with Wasabi paste dipped in soy sauce.

Salmon head is best when cooked with broth like Sinigang sa Miso or Gua­vas (Bayabas); S a m p a l o k (Tamarind Seed). Fish head can be divided into 2 and grilled.
The body of Sockeye Salm­on can be cut butterfly-style and grilled. To simplify, you may get a stove top cast iron. Heat the grill, brush with oil and top sliced salmon. You may marinate Salmon with salt, lemon, pepper and herbs (fresh dill or basil). Fresh Salmon will not need extra seasoning. Enjoying the natural flavor of the fish is the best!
