How do we prepare this fa­mous Morcon?

Discover for yourself that enjoying dishes commonly served during holi­day season can be cooked right in the comfort of your kitchen even if  you’re thousand miles away from your motherland. Morcon (Stuffed Beef Rou­lades) a Filipino Specialty. It can be prepared ahead of time. It is flavorful when the rich, thick sauce blends with the slices of beef. MorconIngredients:
1 kilo Beef round, thinly sliced, marinated in lemon juice, salt, soy sauce
4-4 medium-size fresh toma­toes, finely chopped
1 big onion, finely chopped oil for frying
6-8 vienna sausage, cut into 4 strips (substitute for chorizo de bilbao, if not available)
Hard cooked egg
Cheddar cheese, Extra Old, cut into strips
Strips of red bell pepper
Strips of carrots, pickles Strings
Broth
Tomato sauce
Laurel leaf
Tomato paste
Salt and pepper


MorconProcedure:

  1. Lay marinated slices of beef.
  2. Squeeze together tomatoes and onions. Top on beef slices and allow to stand for 4 hours.
  3. Stuff each slices of beef with sausages, slices of eggs, cheese, red bell pepper and carrot strips. Roll and secure with string.
  4. Fry until golden. Place rolls of beef onto heavy skillet and cov­er with broth, tomato paste and seasonings. Allow to boil then simmer or transfer onto slow cooker to tenderize meat.
  5. Remove cooked beef rolls. Cool and remove strings. Set aside.
  6. Pass the broth onto blender until smooth and thick. Boil to thicken further, if necessary. Slice beef crosswise and top with sauce. Serve.
